Stéphane Vindret has been managing with a master's hands all production at the Glaces des Alpes plant. From designing the recipe to implementing it, by way of managing his brigade of confectioners, he operates just like the great chefs and pastry makers under whom he apprenticed (Charles Jaegler, Christophe Marquant, Franck Fleurance, Ulrich Beringer).
Beyond ice cream, he is always on the lookout for surprising and creative new flavours to in order to put ice cream back at the heart of the gastronomic values and imaginations of the great chefs.
«We make ice cream; that's a fact. But most of all we give our fellow cooks the tools that will let them give free rein to their creativity. My goal is to recreate in the form of ice cream the original flavour of the extraordinary ingredient we've selected.»
